We had one of our "lets make some food together" moments the other day and it resulted in this fantastic salad. It tasted divine and kids actually loved baby spinach (they met each other for the first time). Cold pressed pumpkin seed oil is a must, it adds a wonderful (nutty ;) taste and is extremely healthy too.
I guess kids will eat everything if you just let them cook together with you… And this lovely dinner took just 15-20 minutes to make, so there are really no excuses for not having it at least once every week…
In it's next incarnation we'll experiment with some new ingredients, like cucumber, mini tomatoes and muskmelon. There's no end to possibilities :)
